The Irish are specialists when it comes to fruitcake. And Irish Apple Cake is one of them!

A clever blend of apples, walnuts and cinnamon, this cake is a classic of Irish cuisine. Often enjoyed at teatime, it goes perfectly with a little whipped cream or vanilla ice cream.

Many Irish patisseries offer this type of cake for less than €2 a slice.

Recipe: Irish Apple Cake

Ingredients

150g caster sugar
150g flour
30cl milk
80g chopped walnuts
70g softened butter
4 Granny Smith apples, diced
1 egg
1 sachet vanilla sugar
1 sachet baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Preparation

Preheat oven to 200°C
In a bowl, whiten the butter and sugar.
Add egg, apples, walnuts, milk and vanilla.
Add the remaining ingredients and mix until smooth. Top up with milk or flour if necessary. The whole should be slightly thick.
Transfer the dough to a buttered baking tin and bake for 45 minutes.
Once cooked, don’t hesitate to pan-fry for a few minutes.
Serve hot, with whipped cream.
