The Irish are specialists when it comes to fruitcake. And Irish Apple Cake is one of them!

A clever blend of apples, walnuts and cinnamon, this cake is a classic of Irish cuisine. Often enjoyed at teatime, it goes perfectly with a little whipped cream or vanilla ice cream.

Many Irish patisseries offer this type of cake for less than €2 a slice.

Recipe: Irish Apple Cake

Ingredients

  • 150g caster sugar
  • 150g flour
  • 30cl milk
  • 80g chopped walnuts
  • 70g softened butter
  • 4 Granny Smith apples, diced
  • 1 egg
  • 1 sachet vanilla sugar
  • 1 sachet baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Preparation

  • Preheat oven to 200°C
  • In a bowl, whiten the butter and sugar.
  • Add egg, apples, walnuts, milk and vanilla.
  • Add the remaining ingredients and mix until smooth. Top up with milk or flour if necessary. The whole should be slightly thick.
  • Transfer the dough to a buttered baking tin and bake for 45 minutes.
  • Once cooked, don’t hesitate to pan-fry for a few minutes.
  • Serve hot, with whipped cream.
