A sweet and sour sauce that goes with everything!

Irish Chutney is a sauce made from fruit and vegetables browned in honey, then stewed for several hours. This strange sauce is actually delicious, and goes perfectly with meats such as chicken, beef and lamb. But they’re just as good on Brown Bread on their own, or in a sandwich!

Simple and original to make, Chutney is a sauce that the Irish like to use every day, but especially at Christmas time, to liven up an Irish Spiced Beed, a dish based on spiced beef and Guinness that is eaten cold…

Generally speaking, Irish Chutney uses apples for the most part, with other fruits and vegetables as complements. A touch of ginger and honey freezes the preparation in truly delicious bittersweet flavors…

Recipe: The chutney

Ingredients

  • For 500g of Chutney
  • Preparation time: 30 min
  • Cooking time: 3 hours
  • 300 g apples
  • 200 g pineapple
  • 200 g apricots
  • 100 g orange segments
  • 200 g tomatoes
  • 100 g fresh ginger
  • 100 g honey
  • Salt
  • Pepper

Preparation

  • Wash and peel fruit and vegetables, then cut into small cubes.
  • Next, take the fresh ginger and chop it.
  • Then take a saucepan, pour in the honey and heat until it takes on a light caramel-like hue.
  • Once the honey is cooked, add the fruit, vegetables and ginger and leave to simmer.
  • Season with salt and pepper…
  • Leave to cook on a low heat for 3 hours, stirring often until a compote forms.
  • Once cooked, leave to cool: all that’s left to do is jar and enjoy as a side dish!
