Recipe: Bread and Butter Pudding

Ingredients

  • 8 slices sandwich bread
  • 50g softened butter
  • 100g raisins
  • 4 beaten eggs
  • 600ml milk
  • 100g caster sugar
  • 1 teaspoon liquid vanilla
  • 1 teaspoon cinnamon powder (optional)

Preparation

  1. Preheat your oven to 180°C (350°F).
  2. Generously butter each slice of bread and cut into triangles.
  3. Place a layer of buttered bread in an ovenproof dish, sprinkle with raisins and repeat until all ingredients have been used.
  4. In a large bowl, combine the beaten eggs, milk, sugar and vanilla. Add cinnamon if using.
  5. Gently pour the egg mixture over the bread and the raisins into the dish.
  6. Bake for 35 to 40 minutes, or until golden and puffed.
  7. Serve warm with vanilla ice cream or custard.
