Of course, the Irish love to put Guinness in everything and anything. But good luck to the Cahill family (an Irish family specializing in the production of artisanal flavored cheeses) when, in the 1980s, they decided to try their hand at combining cheese and Guinness!
His idea was simple: mix pieces of cheddar curd with the famous Irish beer, then mold and press them. Time, patience and a taste for things well done have given birth to an extraordinary cheese, recognizable by its black rind and mosaic texture.
And the result is worth the detour! First of all, Guinness Cheddar takes on a marbled appearance: the Guinness has actually seeped throughout, giving it a rounded mouthfeel.
The result is striking, giving a skilful blend of sweet and salty, counterbalanced by a very slight salty bitterness. Enjoy with a good Irish artisan bread (Brown Bread, for example?), or crackers. The result is delicious, full of texture and with a hint of acidity.
