Guinness isn’t just enjoyed in a pint: the Irish like to vary the pleasures of Guinness by making it available as an ice cream, or by slipping a few scoops of vanilla ice cream right into the pint! Freshness guaranteed, with the added bonus of the caramelized flavors of the famous beer!

And while it may come as a surprise, Guinness ice cream has some great flavors. A delicate balance between sweetness and bitterness!

You won’t find this ice cream in every pub, but many establishments, as well as local ice cream shops, offer it. Tasty, it’s aimed at adults only (due to the presence of alcohol, albeit slight). This ice cream is made with Guinness and vanilla ice cream: an explosive contrast that deserves to be tasted!

Recipe for Guinness ice cream

Recipe: Guinness ice cream

Ingredients

  • for approx. 2/3 persons
  • 200 sugar
  • 50 cl whipping cream
  • 35 cl whole milk
  • 1 vanilla pod
  • 6 egg yolks
  • a can or bottle of Guinness (or other Irish stout)

Preparation

  • Mix the milk, cream and sugar and heat in a saucepan for 5 minutes, stirring regularly, then turn off the heat.
  • Split the vanilla pod to remove the seeds, and add them to the mixture.
  • Add the egg yolks to the cooled mixture, beating regularly.
  • Turn the heat back on under the saucepan, and stir until the mixture thickens, without boiling.
  • Turn off the heat and refrigerate for 7 hours.
  • At the same time, heat the beer in a saucepan and reduce for a quarter of an hour. Chill for 3 hours.
  • After this time, add the reduced beer syrup to the vanilla cream in an ice-cream maker.
  • Once the mixture has set, place in the freezer and enjoy when the craving strikes!
