A fish and potato parmentier!
Sometimes it’s the simplest things that are also the most delicious! The proof is in the Irish fish pie! Many local restaurants and Irish pubs offer this dish à la carte, but there’s nothing to stop you following our recipe below!
The result is delicious!
Recipe: Irish Fish Pie
Ingredients
- 1kg white-fleshed fish fillets and a pavé of Irish salmon
- 1kg potatoes
- 20 cl dry white wine
- 200g cooked shrimps
- 200g button mushrooms
- 150ml heavy cream
- 120g butter
- 50g flour
- parsley
- salt
- pepper
Preparation
- Preheat oven to 180°C.
- Place half of the flaked fish pieces in a buttered ovenproof dish.
- Sprinkle with white wine, parsley, salt and pepper.
- Cover with aluminum foil and bake for 15 minutes.
- Remove the dish from the oven and remove the cooking juices separately.
- Fry the mushrooms in a little butter, then place them in the dish with the fish.
- Add the shrimp and place the rest of the fish on top.
- Bring a pot of salted water to the boil and immerse the potatoes in it for 25 minutes.
- Once cooked, purée and set aside.
- In a saucepan, melt the flour and remaining butter to make a sort of béchamel sauce.
- When the mixture turns a roux, add the fish cooking juices, and stir in the crème fraîche.
- All that’s left to do is pour the sauce over the fish, and spread a layer of mashed potatoes over the dish.
- Bake at 220°C for 25 minutes.
- Serve hot with a pint of Guinness.
