Trifle is an Anglo-Saxon dessert made with fresh fruit, sponge cake and custard. Very popular with the Irish, it is most often eaten with the family on December 25th. A delicacy for gourmets!

The perfect dessert for the holidays!

The trifle generally uses fresh fruit, from the traditional strawberry to pears, berries and bananas. It’s all about texture and freshness: the pastry cream must not soak the sponge cake, and the fruit must retain all its freshness!

Trifle can sometimes be made with a little sweet wine (Madeira, for example), but is not suitable for children.

Great pastry chefs in Ireland offer trifles for the holidays, if you don’t want to make your own! Count from 5 to 35€ the trifle according to its size, and its fruits!

Enjoy them in the warmth of your own home, with a good cup of coffee, as a dessert, or as an accompaniment to your Irish Breakfast!

Recipe: Le Trifle

Ingredients

  • 300g strawberries
  • 8 sponge cookies
  • 25 cl liquid cream
  • 3 tbsp caster sugar
  • 1 sachet vanilla sugar
  • 2 egg whites

Preparation

  1. Wash and hull the strawberries. Cut into pieces.
  2. Line 4 verrines with sponge cake.
  3. Heat the cream, caster sugar and vanilla sugar in a saucepan. Leave to cool in the fridge for 2 hours.
  4. Beat the 2 egg whites until stiff and fold them into the crème pâtissière.
  5. Serve a layer of cream on top of the sponge cookies, and sprinkle with strawberries.
  6. Enjoy your meal!
