Parsnips are a very popular vegetable in Ireland! Resembling a white carrot, it is considered an old vegetable but is currently enjoying a real revival in Ireland and the rest of Europe! Delicious, its sweet taste makes it a food of choice, which the Irish love to eat!

An ancient vegetable, never shunned by Ireland

Parsnips have always been a staple food for the Irish, second only to potatoes. The Irish usually roast them in the oven, with spices and salt. Nourishing, parsnips are delicious and very fine. It goes wonderfully with red or white meat! Best of all, it goes perfectly with a good pint of Guinness!

Recipe: Parsnips

Ingredients

  • 1kg parsnips
  • 50g wholemeal flour
  • 10g black pepper
  • 10g coarse salt
  • 2 tablespoons olive oil

Preparation

  • Peel the parsnips and cut into small pieces.
  • Preheat oven to thermostat 6 or 200°C.
  • Meanwhile, place the parsnips in a pan of water and bring to the boil for 5 minutes.
  • Then rinse and drain.
  • In a bowl, combine the flour, salt and pepper.
  • Roll the parsnips in the mixture and place in an ovenproof dish.
  • Add the olive oil and bake for 25 minutes.
  • Enjoy your meal!
