Did you know? You don’t need a smoker to smoke your own fish! This salmon recipe lets you create your own smoked salmon! A marinade of sugar, salt, lemon, spices, herbs and Guinness will give you a very special smoking experience.

And the result is sensational!

Very tasty, this smoked salmon offers a fine balance of flavors. Aromas on the edge, between sugar and salt, lightly caramelized by the bitterness of Guinness. Delicious! You want the Irish recipe?

Recipe: Smoked salmon in Guinness

Ingredients

  • 4 salmon steaks
  • 1 lime
  • 1 lemon
  • 30g white powdered sugar
  • 1 tablespoon coriander seeds
  • 50ml Guinness
  • 60g coarse salt
  • 1 bunch fresh coriander, coarsely chopped
  • 1 carrot
  • 1 bunch fresh dill, coarsely chopped

Preparation

  • Toast the coriander seeds in a frying pan.
  • Place the seeds in a blender. Add lemon zest and juice, salt and sugar. Blend coarsely.
  • Place your salmon steaks in a dish.
  • Rub the fish on all sides with this mixture.
  • Pour the Guinness over the top, and add the coarsely chopped coriander and dill.
  • Leave the salmon to soak for 36 to 48 hours, turning it over every 2 hours to cook and smoke it naturally.
  • Once the 48 hours are up, remove the salmon from its marinade and rinse lightly.
  • All that’s left to do is slice it into thin strips.
  • You can serve this Guinness smoked salmon with vegetables or on Guinness bread with a little butter.
