In Ireland, vegetables are an essential staple food. You can find it everywhere and on every plate: it has to be said that the country’s history has a lot to do with it! Indeed, Ireland has always been a country renowned for its agriculture… but also for its poverty over the centuries.
Ireland’s history of poverty has meant that its people have always favored vegetables as the best source of nourishment.
That’s why the Irish are so fond of “poor” vegetables. Potatoes, cabbage, carrots, onions… Tasty, inexpensive products!
It was thanks to these species in particular that the Irish survived the Great Famine and other episodes of misery.
Nowadays, Ireland has retained its attachment to these vegetables, and continues to cook traditional dishes, sometimes modernized (although its economy is in good shape).
We can’t recommend Colcannon, Coleslaw or mashed potatoes enough. These are simple dishes, but they awaken an unsuspected sweet tooth in all of us. Dishes bursting with authentic flavours and a taste for the simple things in life.
