Crispy fried bacon, the star of Irish breakfasts

Admittedly, bacon isn’t the healthiest food the world has ever known… But in Ireland, it enjoys a central place in Irish hearts. Not least because it’s one of the essential ingredients of the Full Irish Brekfast, the country’s traditional breakfast.

Simple to prepare, it generally takes the form of slices of bacon, sometimes made from fat, sometimes from meat. Pan-roasted, it offers a culinary experience as simple as it is sensational: a skilful blend of lightly caramelized, crispy smoked meat. A delight from the gods!

During cooking, the fat from the bacon melts, flavors the meat and makes it slightly crispy…

The Irish eat it with eggs, Irish sausages, Black Pudding and tea or coffee… Rashers have the advantage of being a perfect match for every other breakfast dish. It explodes in the mouth with a fried egg, and softens the strong character of black pudding…
