Another traditional Irish dish featuring potatoes and kale! As nutritious as it is delicious, Bacon and Cabbage is eaten as a side dish with bacon or lard, keeping the Irish warm on cold winter evenings!

In Ireland, Bacon and Cabbage is a traditional dish that uses products that are historically very important to Ireland: kale, potatoes and tasty slices of bacon or corned beef.

These were simple products, but at the time they were more accessible than others: Ireland had lived in poverty for many centuries. So cabbage and potatoes were accessible foods that the Irish learned to accommodate.

The result is a surprisingly tasty dish! Usually enjoyed with a cold pint of Irish stout, this dish is ideal in winter, warming even the coldest of bodies.

On the flavor side, the sweetness of the potato and the acidity of the cabbage are well balanced… Balanced by the bacon.

Bacon and Cabbage are quite easy to find in Ireland… Particularly in restaurants serving Irish cuisine, but also in traditional Irish pubs offering on-site catering.

Expect to pay at least €12 per dish per person… A hearty, comforting dish, perfect after a day spent exploring Ireland, its wide open spaces and its cities!

Recipe: Bacon and Cabbage

Ingredients

  • Number of people: 5
  • Preparation time : 20 mn
  • Cooking time: approx. 2 hours depending on the weight of the bacon
  • 1 kg Bacon or Smoked Bacon
  • 1 green cabbage
  • 750g potatoes

Preparation

  • Place the Bacon in a pot, cover with cold water and bring to the boil.
  • Wash the potatoes and sauté in another pot of boiling salted water.
  • Then boil each kg of bacon for 50 minutes + 50 minutes extra (e.g. for 2kg of bacon you count 2×50 minutes + 50 minutes).
  • Finally, wash and cut a green cabbage into 4 pieces and put it in the pot 1 hour before the end of cooking time.
  • Serve hot… Bacon and Cabbage is best served with a cold pint of Guinness! Enjoy your meal!
