Chicken and Leek Pie is an Irish pie made with chicken, bacon, mushrooms and leeks. All cooked in cream, of course! Delicious, they’re often eaten in Irish pubs, and they’re as nourishing as you could wish for! Delicious!

Chicken and Leek Pie

A friendly, 100% Irish dish!

Chicken and Leek Pie is an everyday Irish dish. Tasty and hearty, it’s above all a clever blend of flavors that should satisfy the hungriest among you!

It generally calls for shredded chicken breast, bacon browned in butter (a bit calorific!), leeks, mushrooms, milk and cream. For the more demanding, this pie is served with boiled potatoes and a creamy sauce.

Expect to pay around €8/12 for a dish in a restaurant or Irish pub. The result is tasty and invigorating!

Recipe: Chicken and Leek Pie

Ingredients

  • 6 chicken breasts
  • 250 ml heavy cream
  • 100g bacon
  • 100g mushrooms
  • 2 onions, thinly sliced
  • 2 leeks, washed and thinly sliced
  • 2 tablespoons flour
  • 2 pints chicken stock
  • thyme
  • 2 rolls puff pastry
  • salt and pepper

Preparation

  1. Cut the chicken into pieces and fry in a little olive oil. Set aside when golden brown.
  2. In a separate frying pan, sauté the chopped leeks, bacon and onions in olive oil. Cook over low heat for 15-20 minutes, stirring regularly.
  3. Add the flour and stir again.
  4. Then add the chicken stock, golden chicken and mushrooms.
  5. Cook over medium heat for 10-15 minutes, then add the cream.
  6. Reduce to a smooth sauce consistency.
  7. Season with salt and pepper.
  8. Pour the mixture into a dish lined with puff pastry.
  9. Cover with the second roll of dough.
  10. Bake for approximately 25 minutes at 200°C.
  11. Serve with vegetables.
