Coleslaw is a salad of carrots and cabbage, topped with mayonnaise and a vinegar blend. Although this dish is originally American, the Irish eat this salad very regularly, as a side dish with fish, meat, a sandwich or hamburger…etc. Although it’s not the most dietetic dish, it does have the merit of making us feel good about eating vegetables!

Coleslaw is not usually served as a dish in its own right. The Irish prefer it as an accompaniment to fish and chips or other typical Irish specialties.

Coleslaw uses vegetables that are a staple of Irish cuisine: cabbage and carrots. Once cut and grated, they are seasoned with a mixture of mayonnaise, vinegar, sugar and lemon. The mixture gives a very special sweet and salty taste, which will delight those who are reluctant to eat green vegetables…

In any case, the use of so much fat in the preparation of a salad makes Coleslaw anything but healthy! But it’s so good!

Recipe: Coleslaw

Ingredients

  • Serves 4
  • Duration: 15 min.
  • 1/2 white cabbage
  • 3 carrots
  • 3 tablespoons mayonnaise
  • 3 tablespoons plain white yogurt
  • 1 tablespoon sugar
  • 1 tablespoon vinegar
  • salt, pepper
  • 1 granny apple (optional)

Preparation

  • Wash the white cabbage half, and slice thinly into julienne strips.
  • Wash the carrots and grate finely.
  • Wash and grate the Granny apple.
  • Mix the cabbage, carrots and apple in a large bowl.
  • Take a small bowl and pour in the mayonnaise, plain white yoghurt, sugar, vinegar, salt and pepper.
  • Blend until smooth.
  • Pour the dressing over the salad, toss and place the Coleslaw in the fridge for 20 minutes.
  • All you have to do is enjoy!
