In Ireland, the Irish have such a passion for Guinness that they’ll put it in anything and everything, including their bread! And the result is quite stunning! With its soft, fragrant crumb, this “Guinness Bread” has nothing to envy its Brown Bread counterpart!

Soft bread flavored with Guinness

For a change from the traditional, delicious Irish brown bread, the Irish had the bright idea of mixing an unlikely ingredient into their bread dough: Guinness beer.

Rich in flavor, and bursting with the aromas of caramel, hazelnut and coffee, the famous Irish stout transforms this Irish bread into a simple, fragrant dish, to be eaten on its own, or served with a slice of smoked Irish salmon, or as a sandwich with Irish bacon and cheddar!

The result is surprising, and particularly tasty!

Recipe: Guinness bread

Ingredients

  • 1kg wholemeal flour
  • 500g unsifted white flour
  • 150g butter
  • 1 liter buttermilk (or milk by default)
  • 350g cane syrup
  • 200ml Guinness
  • 130g cracked oats (or other cereal)
  • 50g sesame seeds
  • salt
  • sugar
  • 1 teaspoon baking soda

Preparation

  • Place the whole-wheat flour and white flour in a large bowl. Add oats, baking soda, a pinch of salt and sugar.
  • Stir to combine.
  • Take a saucepan and melt the butter over a low heat, then add the buttermilk. Heat until lukewarm. (Do not boil).
  • Add the cane syrup to the mixture until smooth.
  • Turn off the heat, then stir in the Guinness.
  • All that’s left to do is pour the contents of the saucepan into the bowl, and mix to obtain a homogeneous paste. Shape into a ball.
  • Butter some greaseproof paper and place the bread ball on it.
  • Sprinkle with flour, then sesame seeds, and bake at 140° C for 40 minutes. Keep the oven slightly damp, placing a bowl of water near the bread if necessary…
  • At the end of cooking, let the bread cool, then enjoy it with smoked salmon, bacon, cheddar cheese, jam, etc., all accompanied by a good Guinness!
