Once again, the Irish are associating their favorite beer with some rather surprising foods! And cheese was no exception!

Guinness Chesse is fairly easy to prepare. Simply mix together cheeses such as cheddar, blue cheese and creamy cheese (like Vache Kiri or Saint Morêt in France).

Seasoned, the cheese is then mixed with Guinness, then chilled before enjoying as an aperitif!

The Irish sometimes eat it in the pub, on slices of bread or, better still, on crackers (a real passion for the Irish!). It’s a delightfully creamy treat, and the balance is perfect thanks to the beer’s bitterness!

Recipe: Guinness Cheese

Ingredients

  • 100g Irish cheddar
  • 200g blue cheese
  • 200g cream cheese (Saint Morêt type)
  • 1/2 glass fresh Guinness
  • 1 teaspoon paprika
  • 1 teaspoon cumin seeds
  • parsley

Preparation

  • Blend the 3 cheeses together in a blender.
  • Add paprika, cumin seeds, parsley and Guinness.
  • Mix again and chill in a bowl for 1 hour.
  • Serve chilled with crackers or bread.
