A nourishing, warming nettle soup!

Generally speaking, Irish nettle soup is a dish in its own right that will satisfy even the hungriest of appetites. It’s a soup made from potatoes, nettles, leeks and onions. The whole thing is blended with liquid cream and vegetable broth: a real treat!

Many local Irish pubs and restaurants offer this speciality à la carte. The advantage of this dish is that it’s ultra-economical and tasty!

Recipe: Irish Nettle Soup

Ingredients

  • 3 potatoes
  • 2 handfuls washed nettle leaves
  • 2 onions
  • 1 leek, thinly sliced
  • 800ml vegetable stock
  • 30cl crème fraiche
  • butter
  • salt
  • pepper

Preparation

  • In a casserole dish, brown the chopped potatoes in the butter.
  • Add the leeks and onions.
  • Cook over low heat for 15 minutes. Stop before staining.
  • Add the vegetable stock and simmer until the vegetables are cooked through.
  • Add the nettles and cook for 5 minutes.
  • All that’s left to do is blend, season with salt and pepper and, of course, add the crème fraîche!
  • Enjoy your meal!
