A nourishing, warming nettle soup!
Generally speaking, Irish nettle soup is a dish in its own right that will satisfy even the hungriest of appetites. It’s a soup made from potatoes, nettles, leeks and onions. The whole thing is blended with liquid cream and vegetable broth: a real treat!
Many local Irish pubs and restaurants offer this speciality à la carte. The advantage of this dish is that it’s ultra-economical and tasty!
Recipe: Irish Nettle Soup
Ingredients
- 3 potatoes
- 2 handfuls washed nettle leaves
- 2 onions
- 1 leek, thinly sliced
- 800ml vegetable stock
- 30cl crème fraiche
- butter
- salt
- pepper
Preparation
- In a casserole dish, brown the chopped potatoes in the butter.
- Add the leeks and onions.
- Cook over low heat for 15 minutes. Stop before staining.
- Add the vegetable stock and simmer until the vegetables are cooked through.
- Add the nettles and cook for 5 minutes.
- All that’s left to do is blend, season with salt and pepper and, of course, add the crème fraîche!
- Enjoy your meal!
