Recipe: Irish Potato Leek Soup

Ingredients

  • 4 leeks, washed and sliced
  • 4 medium-sized potatoes, peeled and diced
  • 1 onion, chopped
  • 1.5 liters vegetable or poultry stock
  • Salt and pepper to taste
  • Thyme or nutmeg (optional)
  • Cream (optional)
  • Butter

Preparation

  1. In a large saucepan, heat the butter and add the leeks, potatoes and onion.
  2. Sauté until vegetables are tender.
  3. Pour the stock into the saucepan and bring to the boil.
  4. Add the spices of your choice, such as thyme or nutmeg, then reduce the heat and simmer for about 30 minutes.
  5. Once the vegetables are cooked, use an immersion blender to puree the soup, or leave it chunky, as you prefer.
  6. Adjust salt and pepper to taste. For a gourmet touch, you can add a little liquid cream.
  7. Serve hot, garnished with chopped chives or a drizzle of cream, if you like.
