Kippers are a traditional Northern Irish breakfast speciality. These are small red herrings that have been smoked and salted beforehand. A delicious breakfast to get you off to a great start!
Kippers generally take the form of a herring split in two from head to tail. Flattened, boned and cleaned, the fillet is then salted and cold-smoked.
It can then be eaten as is, or lightly pan-fried, as part of the Ulster Fry, the typical Northern Irish breakfast. Its deliciously smoky, salty taste goes perfectly with scrambled eggs or bread and butter.
Rich in omega-3 and nutritional value, it is one of the healthiest foods in the Ulster Fry, along with oats (often cooked as porridge). It’s also an excellent appetite suppressant, so you can get through the morning without worrying about your stomach!
Kippers are usually sold in supermarkets, either canned, fresh or frozen, at economical prices.
Enjoy it with a cup of coffee and orange juice!
