Many Irish pubs offering meals on the premises feature this famous dish on their menus. Simple, economical and, above all, delicious: this soup has everything it takes to please gourmets in search of taste and subtlety!

Expect less than €10 a bowl, with delicious toast and aromatic herbs to spice things up! On the menu: a soup with a light, sweet and savoury flavour that’s sure to delight the palate!

Recipe: Onion soup with Guinness

Ingredients

  • Preparation time: 45 minutes
  • Cooking time: 30 minutes
  • Serves about 8
  • 3 large onions
  • 500 ml Guinness
  • 30g butter
  • 1 c. tablespoon sugar
  • 1 c. tablespoon balsamic vinegar
  • 1.5 liters beef stock
  • 2 garlic cloves
  • 1 c. tablespoon fresh thyme, chopped
  • 3 c. tablespoon flour
  • 8 slices baguette, toasted
  • 250 ml Irish cheddar

Preparation

  • Melt the butter in a saucepan and add the chopped onions.
  • Add sugar and balsamic vinegar until caramelized.
  • Add the chopped garlic, thyme and flour.
  • Stir, then deglaze with Guinness.
  • Then add the beef stock.
  • Simmer over low heat for 20-25 minutes, stirring regularly.
  • Use ovenproof bowls. Pour the mixture in.
  • Add the slices of toast on top, and garnish with grated cheddar.
  • Place on the grill for 8 minutes at 180°C, until the cheddar cheese is gratinated.
  • Serve hot!
