Surf and Turf is an Anglo-Saxon speciality, sometimes found in Irish Pubs. It’s a main course, combining steak and grilled lobster (the two most expensive dishes on a traditional menu!), served with a pan-fried mushroom, fries or salad… A little copious and exuberant, but a real treat!

What is Surf and Turf?

Surf and Turf is a fairly recent dish, dating back to 1966 and originating on the North American coast before spreading to England, Ireland, Scotland and Australia. Its name, Surf and Turf (meaning Land and Sea), brings together the two most expensive ingredients found on restaurant menus: rib steak and lobster. A little extravagant, but you’ve got to treat yourself!

Surf and Turf is most often aimed at good eaters, capable of combining shellfish and beef. The flavors may surprise, but the result is highly prized by gourmets: the tender flesh of the lobster goes particularly well with the steak and its pan-fried mushrooms. We love its barbecue flavour!

Of course, Surf and Turf is a rather expensive dish. Expect to pay at least €25 for a dish in an Irish pub, or €30 in a restaurant.

Recipe: Surf and Turf

Ingredients

  • For 2 persons
  • 1 good-sized live lobster
  • 1 rib steak
  • Mushrooms to taste (trumpet mushrooms, chanterelles, ceps, etc.).
  • 1 garlic clove
  • 2 onions
  • 30g butter
  • olive oil
  • salt
  • pepper
  • meat spices
  • salad, pasta or French fries (depending on your diet!)

Preparation

  • Let’s start with lobster. After putting the lobster to sleep (by swinging it for a moment on the end of your hand), place it alive in a large pot of boiling water for 7 minutes.
  • Then remove from the water and allow to cool.
  • Then remove the lobster meat and set aside.
  • Do the same for the lobster green.
  • Next, prepare the steak, seasoning it with your meat spices, salt and pepper. Feel free to express your creativity!
  • Then wash your mushrooms and fry them in a pan, along with your sliced onions, while adding your green lobster.
  • Now it’s time to fire up your barbecue and grill that rib-eye steak. When your steak is almost done, add the lobster meat (which requires less cooking time than the steak).
  • Once everything is cooked, cut your steak in half, so that each guest is served half a steak.
  • Add the lobster meat, evenly distributed, then drizzle over the pan-fried mushrooms.
  • You can add a few salad leaves, some fresh pasta, or a few French fries to your dish.
  • All you have to do is enjoy!
