Introducing Colcannon

A sure bet for Irish gastronomy…

Like many Irish dishes, colcannon is a very nourishing meal! This is a thick purée made from potatoes, cabbage, butter, milk and onions.

A real treat on a budget!

It’s particularly popular on Halloween (known as Samain), or on cold winter days.

Traditionally, a clean coin is hidden in the mashed potatoes: whoever finds it on their plate will be lucky for the next few days!

Recipe: The Colcannon

Ingredients

  • 1 kg potatoes
  • 1 green cabbage
  • 3 onions
  • 3 tablespoons crème fraîche
  • 50g butter
  • 50cl milk
  • parsley

Preparation

  • Peel and wash the potatoes. Cook in boiling water until tender inside.
  • Drain and mash in a saucepan with milk.
  • Next, tackle the onions: wash and chop them, then fry them in a pan.
  • Meanwhile, wash the cabbage, slice finely and add to the onions. Leave to cook.
  • Once cooked, add the onions and cabbage to the purée.
  • Tie the mixture with the butter and parsley, and serve your plates. All that’s left to do is sit back and enjoy!
