Yellowman is a much-loved treat in Northern Ireland. This tasty, bright yellow sweet has a toffee-like texture: its outer layer is fairly hard and crunchy, while the inside is softer, with a honeycomb texture. One to try for anyone with a sweet tooth or a taste for new culinary experiences!

Tasting Yellowman

A quintessentially Northern Irish toffee!

Yellowman is a handmade sweet found only in Northern Ireland, particularly at the Ould Lammas Fair, held each August in Ballycastle, where exceptional local products are sold. Inexpensive, Yellowman is sold in rough blocks (as its consistency does not allow it to be cut into uniform pieces) and delights toffee-loving sweet-toothed visitors!

Although the recipe for this treat is a closely guarded secret, Yellowman is thought to be a carefully balanced blend of sugar, butter, golden syrup (a sugar syrup much enjoyed in Ireland and England), water, cider vinegar (or white wine vinegar) and bicarbonate of soda. The mixture is then heated to particularly high temperatures to achieve the desired texture. A reaction takes place between the vinegar and the bicarbonate of soda, introducing gas into the sweet and creating its honeycomb-like air pockets.

It is worth noting that there are as many Yellowman recipes in Northern Ireland as there are people in the region! Be sure to try several variations, as their flavours can sometimes be very different!
