Connacht Whisky Distillery is a still new establishment founded in 2016 in the small coastal town of Ballina. Covering more than 2,500m², it is involved in every stage of the whiskey-making process.
She prepares the must, organizes fermentation and distillation, as well as barrel filling and bottling on site.
It is equipped with 3 copper stills, custom-designed by master distiller Robert Cassell. Their size and scope differ somewhat from Irish stills, resulting in a unique and original whisky, far removed from the local competition.
In addition, the distillery enjoys a wild, unspoilt environment that allows it to call on the region’s finest ingredients. The site calls on the cool, pure waters of the River Moy, which meets the Atlantic Ocean a little further on. The result is a slightly salty water, which gives the whiskey a pleasant iodized touch.
