The rather unusual location is home to a picturesque and authentic Irish distillery, passionate about the art of distillation and the creation of renowned spirits. The distillery is located in the heart of St James’s Street, a historic part of Dublin where the history of Guinness beer began.
Pearse Lyons Distillery has set up shop in a church that it has completely renovated. It’s here that guided tours take place, where you can admire the stills and vats in action!
The Pearse Lyons distillery was founded by Pearse and Deirdre Lyons in the 1960s and 1970s. Pearse Lyons (1944-208) was a great spirits enthusiast, and was descended from five generations of coopers who supplied casks to many Dublin distilleries.
With a PhD in yeast fermentation, he was the first Irishman to receive an official diploma in brewing and distilling from the renownedBritish School of Malting and Brewing.
At university, he even interned at the Guinness and Harp Lager breweries, then worked as a biochemist for Irish Distillers.
In short, a major player who went on to found his own distillery in his own name.
Since then, the company has been making high-quality whiskey, as well as the very popular Dublin gin.
The distillery offers exceptional tours of its premises, including a guided tour of the church, an introduction to the history of whiskey and gin and their production processes, and the history of Dublin from its Viking origins to the present day. A tasting will also be offered to round off the event.
