The Baileys recipe is so successful that Baileys Cheesecake has become a kind of national dessert, popular with many Irish people!

Fine and delicious, it’s a clever blend of fresh cheese (mascarpone), butter and Bayleys Irish Cream, served on a gourmet shortbread crust. The result is rather rich and a little high in calories, but the whole thing gives you a rather fine, airy cake!

You’ll easily find them in most local Irish pubs and restaurants. Expect to pay less than €5 a slice… with the risk of developing a taste for it and coming back for more!

This cheesecake is usually served on special family occasions (birthdays, anniversaries, family dinners) or during St. Patrick’s Day. Accompanied by a good coffee or an Irish breakfast tea, this cake is a marvel!

Recipe: Baileys Cheesecake

Ingredients

  • 2 packets shortbread
  • 60g soft butter
  • 500g mascarpone
  • 3 eggs
  • 140g sugar
  • 150 ml Bailey’s Irish Cream
  • 1 fresh vanilla pod
  • dark chocolate chips
  • white chocolate shavings

Preparation

  • Preheat oven to gas mark 6
  • Crush the cookies and fold into the soft butter to obtain a smooth shortbread dough.
  • Place the mixture in a baking dish, making sure it is 2cm thick all over.
  • Place in the oven and leave to set for 5 minutes, once the oven is hot.
  • In a bowl, mix the mascarpone, sugar, egg yolks, Bailey’s, and the inside of the vanilla pod.
  • Beat the egg whites until stiff.
  • Then add them to the mixture
  • Spread the mixture over the shortbread crust
  • Place in the oven for one hour at thermostat 4.
  • At the end of cooking, switch off the oven, and leave to cool inside the oven, until it returns to room temperature.
  • Place the cheesecake in the refrigerator and leave for 6 hours.
  • Sprinkle with dark and white chocolate shavings before serving.
  • Enjoy your meal!
