Boxty is a centuries-old traditional dish in the form of a potato pancake fried in a little fat.

Recipe: The Boxty

Ingredients

  • Number of people: 4
  • Preparation time: 20mn
  • Cooking time: 5 minutes per pancake
  • 1kg potatoes
  • 300g onions
  • 200g butter
  • 2 eggs

Preparation

  • Let’s start by peeling the potatoes.
  • Wash in clean water, then grate into thin strips in a salad bowl.
  • Add the melted butter, onions and eggs. (Note that you can add a little Gruyère cheese to the mixture to suit your taste). Blend until smooth.
  • Finished? All you have to do is make crepes (similar to pancakes).
  • Feel free to turn them over from time to time.
  • You can then serve them with a sauce or garnish (based on vegetables, bacon, onions, etc.) of your choice!
