Ingredients

For foam :

  • 200g dark pastry chocolate (or milk chocolate for extra indulgence)
  • 50g caster sugar
  • 120ml liquid cream
  • 125ml Guinness
  • 3 eggs
  • a pinch of salt

Trim :

  • 200ml liquid cream
  • powdered sugar
  • grated chocolate

Preparation

  • Break the chocolate into small pieces and melt in a bain-marie until smooth.
  • In another saucepan, combine the beer and cream.
  • Heat over low heat, stirring regularly.
  • Add the melted chocolate to the cream and beer.
  • Blend until smooth.
  • Separate the whites from the yolks.
  • Beat the egg whites with a pinch of salt.
  • When firm, gradually add 25g sugar while continuing to whisk.
  • In a bowl, mix the egg yolks with the remaining sugar.
  • Add the melted chocolate to the yolks, stirring gently.
  • Gently stir the egg whites into the mixture.
  • Place the mixture in individual ramekins, and chill for at least 3 hours.
  • When it’s time to serve, whip the cold cream with a little powdered sugar.
  • Top each ramekin with the crème montée, and garnish with shaved chocolate.
  • All you have to do is enjoy!
