Irish bannock is a traditional Irish bread (or cake) ideal for pairing with tea or coffee. It is generally used as a spreadable base by the Irish, who add butter or cream as they see fit. Although eaten every day, it is one of the emblematic breads of St. Patrick’s Day, and is in great demand at this time of year.

Easy to make yourself, they can also be bought ready-made in bakeries or supermarkets. Price-wise, it doesn’t go very far, coming in at under €3 depending on quality and manufacturer.

Recipe: Irish bannock

Ingredients

  • 150g flour
  • 10cl buttermilk
  • 15g white sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 30 g butter
  • 75 g raisins

Preparation

  • Mix the flour, baking soda, baking powder, sugar and salt in a bowl.
  • Add the softened butter and buttermilk until the dough is smooth and slightly soft.
  • Stir in the raisins and knead by hand on a floured surface.
  • Once the bread has formed into a ball, place it on a baking sheet lined with baking parchment.
  • Place in the oven at 190°C for 40 minutes, with a bowl of hot water nearby (the humidity will make your preparation rise more easily).
  • Stick a knife into the baked bread: if it comes out clean, just serve warm, with tea or coffee.
  • Enjoy your meal!
