But what’s the difference between Irish and Scottish shortbreads? The Scottish recipe is still the best known in the world…

To tell you the truth, the recipe is no different: the Irish have just made it their own! And of course, it’s impossible to know whether the Scots or the Irish created this famous cake first!

In terms of composition, it’s a pure butter shortbread, rich and delicious beyond compare!

Irish people usually enjoy Irish shortbread with a cup of Irish tea, or on St. Patrick’s Day. They generally appreciate its simplicity, its comforting taste, and its high calorie content, ideal for fighting off winters that are a little too rainy!

Easy to make at home, they can also be purchased in supermarkets at very economical prices. The shapes are diverse and varied, ranging from the traditional rectangle with holes, to molded shamrocks with Celtic interlacing or Gaelic words.

Recipe: Irish shortbreads

Ingredients

  • 200g butter, softened
  • 110g caster sugar
  • 300g flour
  • ½ teaspoon salt

Preparation

  • Preheat oven to 150 degrees.
  • In a bowl, mix the butter, salt and flour by hand.
  • Add the sugar and knead until you obtain a shortbread dough.
  • On a floured work surface, roll out the dough to a maximum thickness of 1cm.
  • Cut rectangles from the dough and place on a baking sheet covered with buttered parchment paper.
  • Bake in the oven for 30 minutes, and serve warm with a cup of Irish tea!
