Yellowman is a much-loved delicacy in Northern Ireland. Tasty, it’s a bright yellow candy with the texture of caramel, whose crust is rather solid and crunchy under the tooth, while the inside is softer, with a honeycomb texture. A must for gourmets and fans of new culinary adventures!
The Yellowman is an artisanal sweet, available only in Northern Ireland, and notably at the Ould Lammas Fair, held every August in Ballycastle, where exceptional local products are sold. Inexpensive, Yellowman is sold in coarse blocks (its consistency makes it impossible to standardize cuts), and is a delight for caramel-loving gourmets!
Although the secret of this delicacy is closely guarded, Yellowman is said to be a skilful blend of sugar, butter, golden syrup (a sugar syrup much appreciated in Ireland and England), water, cider vinegar (or white wine vinegar) and baking soda. The mixture is then heated to particularly high temperatures to obtain the desired texture: a reaction takes place between the vinegar and the baking soda, which adds gas to the candy, creating honeycomb cells inside the candy.
Note that there are as many recipes for Yellowman in Northern Ireland as there are inhabitants of the region! Don’t hesitate to try several variations: their flavours are sometimes very different!
