A taste of Young Buck

A first in Northern Ireland: a blue cheese made from raw milk!

Young Buck

Behind Young Buck is one man: Mike Thomson, a passionate artisan who decided in 2013 to design the first raw milk blue cheese. A first in Northern Ireland: never before had anyone produced such a cheese (most Northern Irish cheeses are pasteurized and based on cooked milk)!

With his passion for cheese, Mike Thomson turned to the banks to finance his project. However, the banks refused him the loan, considering the raw-milk cheese project a failure in advance…

But he decided to turn to crowdfunding, an alternative method of financing that takes place on the Web. What a surprise when he raised over £80,000 in less than 3 weeks!

All he needed to do was set up shop in Newtownards, and produce Northern Ireland’s first raw-milk blue cheese! The Young Buck was born!

It didn’t take long for the cheese to win a string of awards, including a silver medal at the Irish Cheese Awards in 2014.

Young Buck features

Young Buck is quite tasty, with a taste that’s full of character! It combines all the strength of blue cheese with the creaminess of a generous cheese. A perfect balance, which has earned this cheese its place among the best of local Northern Irish terroir!

Many shops sell it by the slice. Similarly, some of Newtownards’ local restaurants work it into their dishes to reveal all the strength and finesse of this original blue!

A must for fans of traditional Irish cheeses!
