Bread from the 18th century

Behind this strange name, Blaa de Waterford has a history dating back to the Huguenot era of the 18th century. At that time, generations of bakers passed on the recipe for this highly successful bread roll unlike any other.

Only available in Waterford in the city’s bakeries, it’s best eaten hot, straight from the oven. It can be eaten at breakfast, plain or simply buttered, but can also be enjoyed with a savory topping at any time of day, with fresh or toasted bacon, Irish cheddar or any other Irish cheese.

Recipe: Waterford Blaa

Ingredients

  • 500g flour
  • 10g butter
  • 10g salt
  • 10g sugar
  • 20g fresh baker’s yeast
  • 275cl water

Preparation

  • Sieve the dry ingredients.
  • Add the softened butter to the mixture.
  • Dissolve baker’s yeast and sugar in water.
  • Pour the water, sugar and yeast into the dry mixture and knead until smooth and elastic.
  • Leave to stand for 60 minutes.
  • Divide the dough into 8 pieces and roll into a ball.
  • Flour a baking tray and place your balls on it.
  • Leave to stand for a further 50 minutes.
  • Sprinkle the balls with flour, then bake for 20 minutes at 210°C.
