This characterful distillery, housed in a former boathouse, produces some of the region’s finest gins and whiskeys. It all takes place here, in Caherciveen, on the Skelligs coast at the south-western tip of Ireland. A wild and magical place, where the mountains meet the ocean. The distillery has the advantage of being located in the very heart of Irish nature, a spot shaped by the whims of the Atlantic, the purity of the local waters, and the quality of the barley and malt essential to distillation.
This is where whiskey is produced, using copper stills. Each beverage is then distilled three times, according to traditional Irish processes. This process takes time and passion. But Cahercivenn’s oceanic micro-climate, coupled with the ingredients and techniques employed, result in a timeless whiskey with a strong character that smells of Ireland and its terroir.
The distillery also produces artisanal gin, a spirit that is currently very popular on the island. To achieve this, the establishment selects the best botanical species on the coast, to produce a balanced, delicate beverage.
