Dingle Distillery specializes in the production of Irish whiskey. This brand-new distillery opened its doors in 2012, housed in a former sawmill in the town of Dingle. For the time being, its first productions are in the aging phase: see you in 2018 to start tasting them!
Although only recently established, the Dingle distillery is a craft distillery that aims to make its mark on the world of Irish whiskey production. While Irish whiskeys are largely produced by the giants Irish Distillers and Pernod Ricard, this new brand aims to create a new offering, and hopes to make its mark with whiskey of equally high quality.
Opened by Oliver Hughes, Dingle Distillery has been producing Irish whiskey (with triple distillation), gin and vodka since November 2012. To achieve this, the distillery has invested in magnificent copper stills designed by John McDougall.
For the time being, we can’t comment on the quality of their whiskey, which is currently being aged in massive casks. These will not be available until 2018. However, the distillery is now opening its doors to visitors, and has a lovely Visitor Centre. This is your chance to visit the distillery, learn about the various whiskey distillation processes, and, above all, pre-order the future beverage as it matures.
