Cashel Blue is an Irish cheese produced in the Cashel region. Almost the only blue cheese in the whole of Ireland, this cheese is a little wonder of the Irish terroir, and more precisely of County Tipperary!
Cashel Blue was created in 1984, on a small farm in County Tipperary. Its milk, from cows on Mr Grubb’s farm, produces a delicious blue-veined paste, which, once matured, becomes one of the country’s most interesting raw cheeses!
Considered a genuine local product, it is now sold everywhere, in supermarkets and small shops throughout the country, as well as in Great Britain and the United States.
It’s a little wonder to be enjoyed on bread, with a salad, or with red meat!
