Giana Ferguson has been producing Gubbeen for over 30 years on her small farm in County Cork. With the help of her husband and 2 children, she now makes several thousand cheeses in Ireland and the rest of the world. This cheese is made from cow’s milk. Made from baked dough, its rind can be pink or white. Each cheese is then matured, and washed daily to ensure its strength.
