Lemon curd is an Anglo-Saxon cream made with lemon, eggs, sugar and flour.

Very sweet, the Irish appreciate its tartness, which goes perfectly with bread, a scone or a lemon meringue tartlet.

This type of lemon cream can also be found on the breakfast table, as part of a traditional Irish breakfast.

Delicious, it will delight even the most demanding gourmets with its skilful balance of flavours, sugar and acidity. A gourmet blend you won’t want to be without!

On a daily basis, the Irish consume them quite regularly, whether it’s for an Irish breakfast or a snack break, accompanied by a traditional Irish tea.

Recipe: Lemon curd

Ingredients

  • 4 organic lemons, washed
  • 150 g sugar
  • 3 eggs
  • 1 tablespoon flour (or Maïzena)

Preparation

  • Zest the skin of 2 lemons, then slice finely.
  • Place the zest and juice of the 4 lemons in a saucepan.
  • Pour in the sugar and flour.
  • Heat over low heat, stirring regularly.
  • Break your eggs into a separate bowl and beat them.
  • Add them to the mixture in your saucepan, stirring regularly.
  • Then turn up the heat under your saucepan, and whisk vigorously until the cream thickens.
  • All that's left to do is cut the fire and put it in a pot.
  • Allow to cool before storing in the refrigerator.
  • All you have to do is enjoy!
