In Ireland, we have a guilty pleasure: Irish nachos. A sort of starter served as an aperitif, it brings together 2 surprising and unlikely cultures: those of Ireland and Mexico. We’re warning you right now: Irish nachos are far from healthy. It’s an appetizer based on potato chips, covered in a sauce of cheddar cheese, butter and Irish beer. What a program!
They’re usually sprinkled with chives and fried bacon: the perfect way to rack up the calories!

But we have to tell you: this dish, far from being subtle, is truly addictive! We love its pronounced taste (due to the perfect marriage of Irish stout and cheddar), its crunchy yet melt-in-the-mouth texture… It makes for a contrasting starter that the Irish are crazy about!

The latter are used to consuming them, especially on St. Patrick’s Day. A simple dish, admittedly rather heavy, but ideal for celebrating March 17 Irish-style!

Recipe: Irish nachos

Ingredients

  • A large packet of nachos or chips
  • slices of bacon
  • butter
  • 2 garlic cloves
  • 2 tablespoons flour
  • 4 teaspoons milk
  • 4 teaspoons Guinness
  • rapped cheddar
  • chives
  • salt
  • pepper

Preparation

  • Place your nachos in a salad bowl
  • In a saucepan, melt the butter over low heat.
  • Add garlic and flour
  • Mix
  • Add the milk and bring to the boil.
  • Then add the grated cheddar and beer: stir until you obtain a slightly thick sauce.
  • Season with salt and pepper
  • Coat the nachos with this sauce
  • Sprinkle with chopped chives and pan-fried bacon bits
  • Enjoy immediately!
